Key Responsibilities
- Prepare and cook breakfast, lunch, dinner, snacks and other meals for passengers and crew
- Follow company menus, recipes, portion sizes and presentation standards
- Organise daily mise en place and food production according to the sailing schedule and expected passenger numbers
- Prepare a varied range of dishes, including meat, fish, vegetables, soups, sauces, side dishes and cold food
- Ensure that all meals are ready and served on time
- Maintain consistent food quality, taste, presentation and portion control
- Handle dietary requirements, food allergies and special meal requests correctly
- Ensure that the galley, equipment, refrigerators, freezers and storage areas remain clean and properly organised
- Maintain food temperature, cleaning and hygiene records
- Comply with HACCP, food-safety, sanitation and company procedures
- Minimise food waste and use provisions economically
- Take part in vessel safety drills and perform assigned emergency duties
- Assist with loading provisions and other galley-related duties when required
Candidate Profile
- Previous professional experience as a Cook, Chef de Partie, Senior Cook or similar
- Experience in a busy restaurant, hotel, catering operation, cruise ship or passenger ferry
- Passenger-vessel or other maritime experience is preferred
- Strong all-round culinary skills rather than experience in only one kitchen section
- Ability to manage daily food production with limited supervision
- Experience preparing meals for both guests and crew
- Good knowledge of food hygiene, HACCP, allergen control and safe food storage
- Good planning, time-management and stock-control skills
- Able to maintain quality while working under significant time pressure
- Physically fit and prepared for demanding working hours at sea
- Reliable, disciplined, flexible and able to work in a multicultural environment
- Good spoken English

Important Information
This is not a standard Chef de Partie position in a large hotel or cruise-ship galley with several cooks assigned to separate stations. The Cook is expected to take responsibility for most of the daily cooking operation, preparing food for both passengers and crew with the assistance of one Galley Steward. Candidates should therefore be realistic about the workload and confident that they can independently organise and complete high-volume food production.
