Key Responsibilities:
Baking and Preparation:
- Prepare and bake a variety of breads, rolls, pastries, cakes, and other baked goods according to cruise line recipes and specifications.
- Follow recipes accurately to ensure consistency in taste, texture, and appearance.
- Prepare dough, batters, and fillings as needed for daily production.
Recipe and Menu Development:
- Assist in the development and testing of new recipes and menu items.
- Work with the Pastry Chef to create seasonal or themed baked goods for special events and occasions.
Kitchen Management:
- Manage the daily baking operations, including organizing and prioritizing tasks to ensure timely production.
- Maintain a clean and organized work area, adhering to hygiene and safety standards.
Quality Control:
- Monitor the quality of ingredients and finished products, ensuring they meet the cruise line’s high standards.
- Address any quality issues and adjust processes as necessary to maintain consistency.
Inventory and Stock Control:
- Assist with inventory management, including ordering and receiving supplies for the baking section.
- Ensure proper storage of ingredients and equipment to maintain freshness and prevent waste.
Health and Safety:
- Adhere to all food safety and hygiene practices, including proper handling, storage, and sanitation.
- Follow health and safety regulations to ensure a safe working environment.
Team Collaboration:
- Work closely with other kitchen staff and departments to coordinate baking schedules and support overall kitchen operations.
- Communicate effectively with the Pastry Chef and other team members to ensure smooth and efficient operations.
Guest Service:
- Contribute to the overall guest experience by delivering high-quality baked goods that meet or exceed expectations.
- Accommodate special requests and dietary restrictions as directed.
Qualifications and Skills:
- Experience: Previous experience as a Baker or in a similar role, preferably in a luxury hotel, restaurant, or cruise ship environment.
- Baking Skills: Proficiency in baking techniques, including bread-making, pastry preparation, and cake decoration.
- Creativity: Ability to develop and present innovative and visually appealing baked goods.
- Attention to Detail: Strong attention to detail in recipe execution and presentation.
- Organizational Skills: Good time management and organizational skills to handle multiple tasks efficiently.
- Health and Safety: Knowledge of food safety standards and hygiene practices.
- Communication: Effective communication skills and the ability to work well in a team.
Education:
- Culinary degree or relevant training in baking and pastry arts is preferred but not always required with sufficient experience.
Physical Requirements:
- Ability to stand for long periods and perform physically demanding tasks.
- Must be able to lift and carry heavy items, such as bags of flour and baking equipment.

- The role may require working long hours, including early mornings, evenings, weekends, and holidays.
